Coffeecake with Strawberries
Now I'm a fan of shortcakes and I've even stocked heavy cream in the market this weekend so there's no excuse not to make some.
But I made this recipe 2 times this week and it's a winner. So simple!
1/2 cup sugar
1/2 tsp salt
1 tsp baking powder
1 large egg
2 ounces canola oil
1/2 tsp almond extract
1/2 tsp orange extract
4 ounces milk
1 cup fresh summer fruit
Prehead oven to 400 degrees. Butter an 8x8 pan.
Mix together all dry ingredients.
Beat egg and oil until well blended. Add milk and extracts and mix well.
Place dough into buttered pan and spread evenly.
Layer fruit on the top of the cake in a single layer.
Strawberries, blueberries, peaches or nectarines are a good choice.
Bake 30 minutes.
Serve warm or cold.
